Grape by grape, in successive pickings (3 to 10). Botrytized grapes (noble rot) approximately 20% potential alcohol.
 
Ageing :
3 years in barrel made of hand-split oak staves.
 
Production and average age of the vineyard :
8,5 hectoliters per hectare - 35 years.
 
Annual average production :
60 - 70 barrels (20,000 bottles).
